Yoshida Udon is a local udon noodle dish eaten mainly in Fujiyoshida City and the surrounding Gunai region of Yamanashi Prefecture. It is characterized by its firm, very chewy noodles and suridane spice mix. It is one of the 100 Best Local Dishes selected by the Ministry of Agriculture, Forestry and Fisheries and is also designated as a Yamanashi Prefecture local food to be passed on to the next generation.
