Sasa-zushi is sushi made by placing bite-sized portions of sushi rice on top of sasa bamboo leaves, topped with ingredients and seasonings. It is a local cuisine of Niigata Prefecture and the Hokushin region of Nagano Prefecture, and it has been selected as one of the 100 Best Local Cuisines of Agricultural, Mountain, and Fishing Villages.
