Kugini is a regional dish that has been made since ancient times along the Seto Inland Sea coast of Japan (Harima, Settsu, and Awaji regions). It is a type of tsukudani (simmered food) made by cooking sand eels, their young (konago), or shinko in soy sauce, sugar, and ginger until sweet and savory.
