Hiyashiru Udon (Cold Soup Udon) is a style of udon eaten primarily as a home-cooked meal in the summer around the Omiya, Kawagoe, and Kazo areas of Saitama Prefecture. It is eaten with a dipping sauce made by grinding sesame, light-colored rice or barley miso (sometimes other types of miso), shiso leaves, and sugar in a mortar, then diluting it with cold water or dashi stock. It is sometimes garnished with myoga ginger or ginger, and thinly sliced cucumber may also be served on the side.
