🍱 Hirayachi (Vegetable Pancake)
· 📍 Okinawa
"Hirayachi" is made by mixing wheat flour with egg and Dashi (=Japanese soup stock) (or water), sprinkling with green onions, Chinese chives, and other ingredients, and baking. It is a salt-flavored “Okonomiyaki”-like dish and is often made with leftover vegetables or ingredients that are always on hand in the refrigerator. Recently, it is sometimes called "Okinawan-style Okonomiyaki" because many people eat it with sauce. It is called "Hirayachi," which means to grill flat. The texture is like the Korean pancake.
